Currently we can only configure the defaultFrom and the bcc config to store an email address to receive the error mails.

This should be changed, so that the receiver(s) of the error mails can configured independently.

Possible way:
Add in the sendMail-Method of ZfExtended_log a optional bcc to the $this->send call.
